Abstract

To the Editor:  —I have read with a great deal of interest the food articles appearing in The Journal in Current Comment. March 23, special reference was made to peanuts, and on page 1004, April 6, to the yield of food per acre. This comment referred especially to corn, and stated that 35 bushels of corn per acre produce 150 pounds of protein and more than 3,000,000 units of energy. Further reference was made to the soy bean.The peanut is unusually interesting for several reasons: First, it produces an average of 1,000 pounds of nuts per acre, containing 2,000,000 units of energy and approximately 220 pounds of protein. If the peanuts are properly handled, they will produce about 500 pounds of peanut flour, which contains 44 per cent. of protein and 7.5 per cent, of fat. This peanut flour blends readily with all flour and flour substitutes as well
