This book is based on the proceedings of the symposium on total parenteral nutrition sponsored by the Food Science Committee, Council on Foods and Nutrition of the American Medical Association held in Nashville, Tenn, in 1972. The format of the book is excellent in that a formal presentation by an authority in the field is followed by a discussion among several experts, with the summary of the discussion at the end of the chapter.
The book is divided into four parts. Part 1 is the discussion of the patient evaluation. Part 2, which represents the most important part of the publication, is entitled, "Nutritional Composition," and contains material on amino acid, carbohydrate, and fat solutions, in addition to information on vitamin and mineral preparations. The chapter by Dr. Kinney on calorie and nitrogen requirements is excellent. The chapter on carbohydrates by Dr. Cahill and the chapter on fats by Dr.
