These points are well taken. Our findings that the community is generally obese and that relatively large quantities of calories and animal fat are consumed was given an unwarranted interpretation by some in the lay press. I note that Drs. Ritota and Cooper do not have any quarrel with our findings, but point out that prosciuto is a delicacy eaten only on special occasions. This is correct. As we stated, however, it is a great favorite that was often served to us in the meals we ate with various of the hospitable Roseto families.
